Cheddar Meatloaf




One of my favorite meals my mom used to make was her meatloaf. Whenever I make it now days it's filled with memories from when I was younger. I recently found this new recipe for meatloaf. It's something I've never tried before because it has cheese in it! I never even thought about putting cheese in meatloaf! And the best part is, this recipe only makes two servings. Which is the perfect amount for my family! It's tastes great, and it's easy to make!


Ingredients:

For the Loaves:

  • 1/2 lb ground beef

  • 1/4 cup cooking oats

  • 1/2 tsp salt

  • 1/2 cup cheddar cheese (shredded)

  • 1/4 medium onion

  • 1 egg


For the Toppings:

  • 1 tsp brown sugar

  • 1 tsp mustard

  • 2 Tbsp ketchup


Instructions

  1. Preheat oven to 350 degrees F.

  2. Dice onion into small pieces.

  3. In a medium bowl combine ground beef, oats, salt, cheese, onion, and egg. Mix well.

  4. Shape beef mixture into 2 small oval loaves. Place loaves onto a small sheet pan or shallow baking dish lined with parchment paper or tinfoil sprayed with non-stick spray.

  5. In a small bowl combine brown sugar, mustard, and ketchup and spread over top of loaves.

  6. Bake for 30 minutes.
