If you take an hour or two on your Sunday off to make these tasty treats, you won't have to worry about snacks throughout the week!
Easy No-Bake Breakfast Cookies
3/4 cup peanut butter
1 Tablespoon honey or maple syrup
1 teaspoon vanilla
1-3 Tablespoons chia seeds
3/4 cup old fashioned oats
Optional mix in's: 1/4 cup of mini chocolate chips, chopped almonds, raisins, pumpkin seeds, protein powder, flaxseeds
Place the peanut butter, honey, and vanilla in a microwavable bowl and microwave the ingredients for 20 seconds. Stir the mixture until well combined then add in the remaining ingredients (and any extra mix-ins). Stir well and ensure everything is well incorporated. Roll the mixture into 8 balls and place the balls on a baking tray lined with parchment paper. Press the balls flat slightly and place them in the fridge for at least an hour to set. Store breakfast cookies in an airtight container in the fridge for up to two weeks.
Frozen Banana Bites!
1 tbsp Natural Peanut Butter
1 tbsp Raspberry Chia Jam
Peel bananas and slice bananas approx 1.5-2cm thick (1/2 - 3/4 inch) thick. Add a small amount of nut butter to a banana slice and top with a small amount of chia jam. Top with another banana slice to make a sandwich. Continue until all the banana is used up. I made 14, but how many you make will depend on the size of your banana and how thick you slice. Line a baking tray with a silicone mat/baking paper and place the banana treats on the tray in a single layer, ensuring the bites to not touch (this stops them from clumping together.
Freeze for two hours (or longer) and then transfer to a freezable container. Enjoy straight from the freezer.
Healthy Cookie Dough Balls
1 cup + 2 tbsp oat flour
1/2 cup nut butter
3 Tbsp honey
1 Tbsp coconut oil melted
1 tsp vanilla
Pinch of salt if none in nut butter
1/2 cup chocolate chips
Mix together all ingredients in a bowl until well combined. If too wet to roll into balls, chill in the fridge for 30 minutes. Roll into balls and store in fridge or freezer. If freezer, defrost for a few minutes before eating.
