What's this? A Christmas appetizer and drink??


As the holidays are coming in at full gear, we have two recipes for you!! One is for some mini chicken Parmesan lasagna rolls! And we also have a fun drink for the adults! But we are also adding in a recipe for the drink that is kid friendly too! It's the holidays, everyone deserves to kick back and have some fun!


Mini Chicken Parmesan Lasagna Rolls


INGREDIENTS

  • 2 c Galbani Ricotta

  • 10 Barilla Wavy Lasagna

  • 8 oz Galbani Mozzarella, , shredded

  • 1/3 c Barilla Marinara Sauce

  • 20 Chicken Strips

INSTRUCTIONS

  1. Bake Chicken Strips according to package instruction.

  2. Bring water to a boil and cook lasagna according to package instructions. 

  3. Once pasta is ready drain water and lay pasta out on a piece of parchment paper to cool. 

  4. Cut each piece of pasta in half width-wise.

  5. Spread the ricotta cheese on each pasta half leaving about a half inch uncovered at one end.

  6. Lay a chicken strip that is the width of the pasta and about 1 inch thick (trim chicken if necessary) across the end of the pasta with the ricotta on it. Beginning at that end roll the pasta up.

  7. Cut the lasagna roll in half creating two mini lasagna rolls each with one wavy end.

  8.  Place the rolls on a baking sheet and top each with about 1 teaspoon on sauce and 1 teaspoon of shredded mozzarella. 

  9. Bake at 350°F for 8-10 min or until cheese is melted.

NOTES

If you are making these ahead of time you will stop before adding the sauce and cheese. Place in an airtight container and store in the refrigerator overnight. When you are ready to use them place them on the baking sheet and cover with sauce and cheese. You will need to cook these slightly longer to heat them through so you may want to add a little extra sauce and cheese to each to keep them from drying out. Bake for at least 10 minutes and add additional time as needed. 



INGREDIENTS

  • 2 .13oz packets Unsweetened Lemon-Lime Kool-Aid

  • 2 Cups Sugar

  • 1 12oz Can Pineapple Juice

  • 1 12oz Frozen Lemonade Concentrate, thawed

  • 1/2 liter of SpriteIce

  • Red Sanding Sugar for Glass Trim

INSTRUCTIONS

  1. Pour 2 quarts of water in a 1 gallon pitcher.

  2. Add the Kool-aid mix and sugar and stir until the sugar is dissolved.

  3. Add the pineapple juice and lemonade and stir well.

  4. To top the rim of a glass, dip the top in water then dip into the sanding sugar.

  5. Just before serving, add the Sprite and ice.

  6. Serve and Enjoy!


Notes


To make this for adults, just add in your favorite vodka for a fun alcoholic drink this holiday!
